Super Easy Baby Food Recipe

One of the things I especially love about being a mum, is that I get to make up baby food for Phoebe. It gives me a real sense of purpose, it's literally my responsibility to make sure she eats well, and grows up strong and healthy. Plus I've really been enjoying the whole weaning process, and watching her first reaction to certain foods, its very cute.

Plus Phoebe absolutely loves everything I've made, and the only thing she's refused to eat is an orange so far. But I think it was the combination of the bitterness and strong smell, that put her off.

What you'll need
10 Fish fingers
2 Courgettes
2 Medium sized Potatoes

Firstly heat your oven to gas mark 6 or 200c for fan ovens. Next peel and slice the potatoes, and pop in a saucepan of water. The courgettes don't need peeling but they will also need slicing, and popping in another saucepan of water.

Next lay the fish fingers out in an oven tray, and once the oven is heated up pop them in for 15 minutes, or as the box instructs. After 5 minutes turn the hobs on to boil the veg. 

I like to boil the veg for longer than they actually need, to make them softer for mixing up. So I'll leave them on a low heat until the fish fingers are ready.

Once everything is cooked/boiled leave for at least 20 minutes to cool down, then whiz it all up in a blender, adding a little water if it needs it. Usually the courgettes are quite watery, so you don't need to add much more in. One tip though, make it into a runny soup like consistency, it's always easier for Phoebe to eat, the runnier it is.

I usually get enough to feed her for 4/5 days. Both for lunch and dinner. Obviously it's up to you how big you make each portion, but I usually fill my tubs half way and that makes a decent portion for Phoebe to eat. As she gets older I'm sure I'll fill the tubs to the top.
